Trevor Clatterbuck’s Homemade Pizza with Clean-Out-the-Fridge Toppings – Ep. 13

Simple, quick dough recipe with Clean-Out-the-Fridge toppings of cheese, greens, vegetables, protein, sea salt, olive oil, and maybe some balsamic. I did have to buy the cheese.

This makes one pizza, deep dish style, or divide it into two for a thinner crust.

Ingredients:

  • 19.2 oz Caputo Flour

  • 1 Instant Yeast Packet

  • 10.4 oz Warm Water

  • 0.16 oz Salt

  • 0.32 oz Honey

  • 0.48 oz Extra Virgin Olive Oil

  • 4 oz Prosciutto, cut into 2'' pieces

  • 12 oz Mozzarella Cheese, Sliced

  • 4 Large Cherry Tomatoes, quartered

  • 1/2 Medium Sweet Onion, sliced into strips

  • 6 (or more) Olives of choice, cut in half

  • 14 oz Pureed Tomatoes (preferably San Marzano)

Directions:

1. Make the Dough
Mix the Yeast and Warm Water in a mixing bowl that will attach to a mixer. Stir in the honey, olive oil, salt. Add 3/4 of the flour and and mix with the dough hook for one minute. Add the remaining flour a little at a time until all incorporated into he dough ball (2-5 minutes). Move the dough ball to a greased bowl, cover with a clean dish towel and Proof in a warm spot in your house for an hour. Heat your oven to 500 degrees with the pizza stone inside.

2. Cut up Your Fridge Ingredients
Slice the Onion, Pepper, Mozzarella cheese, Tomatoes, Olives, Prosciutto

3. Bake the Dough
Punch the dough ball that has doubled in size down to remove the air. Place the dough ball on your Pizza Peel or baking sheet and press out into a round 12″ or so pizza crust. It should fill your Pizza Peel or baking sheet. If one pizza, bake time is 3 minutes. If two pizzas check after 90 seconds.

4. Assemble, Cook Your Pizza
Start placing your ingredients on the baked pizza crust. Pureed Tomato first, then the cheese, onion, pepper, prosciutto, olives, and quartered tomatoes. Place in then oven onto a well floured pizza stone or baking sheet. Cook for three minutes or until cheese has melted. Remove from the oven, place on a cooling rack for three minutes. Move to a cutting board, slice, serve and ENJOY!
